Watching your sugar level is very important, especially when you have high risks for diabetes or you are already a diabetic. But indulging in occasional sweet should not forbid you from enjoying the pleasure.
Sugar-Free Old-Fashioned Bery Cobbler
Ingredients: 1/2 cup fruit-sweet boysenberry or blueberry syrup, 4 cuops blackberries or blueberries, marionberries, boysenberries, 3 tbs. cornstarch, 3/4 tsp cinnamon, 3 tbs. water
Ingredients for dough: 1 cup unbleached flour, 1-2 packets of sweetener (optional), 1 1/2 tsp baking powder, 1/4 cup low fat fruit-sweet berry or cherry yogurt, 1/2 tsp salt, 2 tbs apple juice concentrate, 2 tbs melted margarine
Preparation:
Preheat oven to 400 degrees.
Spray deep dish pie pan with nonstick spray. Stir in cornstarch into water until dissolved. Mix in cinnamon and syrup. Let it sit while making the dough.
In a separate bowl, mix together salt, flour, baking powder. Then combine juice concentrate, yogurt, and margarine. Pour the mixture over the sifted flour. Blend gently with a fork for 20-30 seconds.
Kneed the dough within 20-30 seconds. Press dough into approximately 1/4-1/2 inch thickness on the floured surface. Fold rinsed, drained berries into syrup and cornstarch mixture.
Into the greased pan, pour down the berry. Set the cobbler dough into place over the top. Press dough against sides of pan and cut a design in the dough for air vents. Turn oven heat to 375 degrees. Bake for about 20-25 minutes.
Once the dough is light brown that means that the cobbler is done.
