An Almond Cheesecake is a dessert that can be served during a special occasion; it may be a birthday, anniversary, or even the Thanksgiving Day. It can also be served during ordinary days like an ordinary afternoon with neighbors, friends or your family.
This dessert is very loaded in terms of its taste a well as its texture. If you have some old friends or neighbors or a member of the family that is watchful of their sugar intake, then you can try the sugar-free low-fat Almond Cheesecake squares.
Sugar-free low-fat Almond Cheesecake Squares
Ingredients for Chocolate crust: 1 tsp vanilla extract. 6 tbsp melted margarine, 2 ½ tsp sweet N low (equal) or 8 packets, 1 ½ cups low-fat graham crackers, ¼ cocoa
Ingredients for Cheesecake mix: ½ tsp vanilla, 1 cup low-fat sour cream, 2 tbsp cornstarch, 2 eggs, 2 egg whites, 3 packages of fat-free or low-fat cream cheese (8 oz. each), 5 ½ tsp of sweet N low (equal) or 18 packets, ¼ cup sliced almonds, ½ tsp almond extract
Preparation:
*For chocolate crust:
Crush the graham crackers. You can do this by putting the crackers inside a zip lock bag and crush them with a rolling pin on a low or medium speed. Crush thoroughly.
Mix sweet N low, graham cracker crumbs, and coca in a medium bowl.
Add in vanilla extract and melted margarine. Mix very well.
Pat mixture equally on bottom of a 13×9” pan.
Set aside.
*For chocolate mix:
Preheat oven to 300°F.
In a large bowl, beat cream cheese until smooth.
Add in the ingredients. Beat until they are smooth, except the almonds.
Pour the mixture into the crust that was set aside. Sprinkle the top with almonds.
Bake it for about 30 minutes or until the mixture is set. Let it cool until you can touch the pan.
Place in the refrigerator for 6 hours until chilled.
Cut into squares and it’s ready to be served.
