Sugar-Free Marmalade Oat Muffins
Ingredients: 1 ½ cups thin-rolled oats (quick), 2 ½ tbsp canola oil, 2 egg whites, 1/3 cup all fruit orange marmalade, 1 ¼ cups unbleached flour, 1 ¼ tsp baking powder, ¾ tsp baking soda, ¼ tsp regular or lit salt, 2/3 cup apple juice concentrates, 2/3 cup tangerine or orange juice concentrate, 2 ½ tbsp dried ground orange rind
Preparation:
Preheat the oven at a temperature of 350°F.
Sift the salt, flour, baking powder, and baking soda all together.
Mix in the dried ground orange rind. Set aside.
Ina separate large bowl, put in all the liquid ingredients and mix them all together, include the egg whites that are lightly beaten.
Pour in the liquid mixture over the dry ingredients. Mix them all using a fork. Mix until it is moistened.
Gently fold in oats.
Fill in the muffin cups at ¾ full.
Bake the mixture at 350°F for about 17-21 minutes.
Check the muffins. The muffins are ready when the toothpick inserted comes out clean.
Put out the muffins. Let them cool for 10-15 minutes.
Do not refrigerate. Serve them warm or at room temperature.
